Agnolotti and Ravioli Two Ways

I recently bought some Ricotta and Spinach Agnolotti and Chicken and Mushroom Ravioli on special. I don't eat a great deal of pasta (T does) but I consider this kind if pasta a real treat.
I decided to cook both pastas together, make a big batch and have enough for leftovers. I prepared two different 'sauces,' both of which were delicious!

The tomato based sauce was made up of onion, garlic, sun dried tomatoes, chopped tomatoes and some tomato paste. Simple but yummy.


The other 'sauce' was a new one I tried out. I visited taste.com.au and found a recipe for Avocado and Rocket Pasta. The flavours were fresh and delicious. I definitely recommend this recipe to anyone.

Healthy Nachos

I have fond memories of eating nachos when I was younger but they are not something I would happily eat these days. Corn chips, piles of cheese and lashings of sour cream aren't exactly friendly to a girls hips. So I made it my mission to create a low fat version of nachos. I knew they wouldn't be as delicious, but nor would I feel so guilty when eating them.
I toasted pita bread instead using corn chips, had low fat sour cream, a sprinkling of cheese, guacamole, chunky salsa and chilli beans. I used a little Mexican seasoning and a jar of salsa, which I added to, but pretty much the rest was from scratch. I am rather happy with my effort.


And there was just enough left over for lunch. Perfect! Although they were low fat, I have to say I was totally impressed (and so was T).

Pita Bread Pizzas

I wanted a meat-free dinner and had plenty of left overs which inspired me to make pizzas. Pita bread made the base, I used the remaining tomato puree with garlic and herbs to spread over the bases and raided the fridge for toppings.
The pizzas were topped with capsicum, spring onion, olives, sun dried tomatoes, antipasto from a jar; yellow & red capsicum, zucchini and eggplant. The cheese was grated tasty cheese and a sprinkling of fetta. T's pizzas also had some chorizo.


Just before serving I also topped the pizzas with rocket.


Pita bread pizzas mean the focus is on the toppings rather than the base which suits me just fine.

Smoked Salmon and Brown Rice

Another day, another delicious lunch!
Today's lunch was made using a range of left overs I found in the fridge. This is what I mixed together before heating it in the microwave:
Brown rice
Smoked Salmon
Baby spinach leaves
Tomato puree
Fetta cheese
Avocado
Salt & pepper


It was a bit light on the vegetables but the brown rice and salmon gave me some extra goodness.

Chicken Stir-fry & Fried Rice

We had quite a lot of rice and vegetables left over from the previous night's Chinese meal so I decided to make a chicken stir-fry.
It was a very quick and easy meal to cook. For the stir-fry I just fried chicken strips, some garlic and ginger then added the vegies and some chilli sauce.
The fried rice was equally easy. I fried the rice with some garlic then added peas, corn, chopped capsicum and spring onion. Next I fried and mixed through an egg and splashed in some soy sauce.
