Last night for dinner I made myself a tasty wrap. The pita bread was fresh (M-mmm!) and I filled it with smoked trout, sour cream, baby spinach leaves, green capsicum, tomato avocado and gherkins. Nice.

Turkey Burgers
I love turkey mince. T hates it. I cook, so I win. We had home made turkey burgers the other night. I was super proud of my effort, I thought the burgers were delicious.
The mince was mixed with mustard, tomato paste, worcestershire sauce, an egg, chopped parsley, salt and pepper (I think I might have added something else too but I can't remember what).
Once the patties were cooked I put them between pieces of bread with a little garlic, cheese, tomato, beetroot (I love beetroot), lettuce, avocado and cranberry sauce.
I even had a burger for lunch the next day. There are advantages when T doesn't enjoy his dinner!

My New Favourite Sandwich
I have discovered a new favourite filling combination for rolls or sandwiches. I was being lazy when making my lunch last week and thought, "What can I put between these pieces of bread that will be tasty, nutritious and require zero cutting up?"
This is what I came up with:

- Vegemite spread on one piece of bread
- Avocado spread on the other slice
- Hommus spread on top of the vegemite
- A slice of cheese
- Crunch lettuce
- Baby spinach leaves

Toasted Chicken Rolls for Dinner, Pasta for Lunch
I roasted a chicken yesterday and had some near stale rolls that I didn't want to waste so I decided to make toasted sandwiches (rolls in this case) for dinner. There was hardly any effort involved but they tasted great. Inside the rolls was avocado, chicken, cheese, capsicum, spring onion, tomato, rocket and baby spinach leaves with a squirt of tomato sauce and a little bit of butter.
While I was preparing dinner I put some pasta on to boil. I made pasta for T's lunch tomorrow because there was extra chicken, spring onion and spinach leaves from dinner. I threw them together with some pasta sauce to create his lunch. It was easier than making a sandwich!

Smoked Salmon Sandwich
Mmm-mmm, I just finished a very tasty lunch!
I bought some smoked salmon on special today and was eagerly awaiting lunch time so I could eat it!
Between the layers of Lawson's Homestead Seed & Grain bread I had avocado, tomato, spring onion, parsley, smoked salmon, rocket, lettuce leaves and a light spread of vegemite and ricotta cheese.
Delicious!

Sandwich for Dinner
This was my dinner the other night when I was cooking for 1 and very uninspired. It consisted of avocado, cheese, cucumber, tomato, capsicum, lettuce, tuna and cottage cheese as well as some sweet chilli sauce, salt & pepper on fresh bread.

Chicken Parmagiana in a Sandwich
When T had his pie and chips for dinner I had a tasty toasted sandwich. I made the most of the oven being on and cooked myself a Steggles Chicken Breast Parmagiana. I then cut it into strips and used half of them in a sandwich. I cut the other half of the parma chicken breast into smaller pieces and had them in my sandwich for lunch the following day.
I put the chicken pieces between two pieces of toast along with a slice of cheese, cucumber, tomato, capsicum, lettuce, avocado and tomato sauce.
It was pretty yummy.

Sandwich Special
Nice fresh bread is one of life's true pleasures. Even the most simple spread or fillings can become something special when placed between two soft, fresh slices of bread. My favourite breads are Safeway's Four Seed Loaf and Bakers Delight's Cape Seed Loaf. Mmmm, look at all those grains!
Here are a few sandwiches I have prepared lately.
This beauty contained the following ingredients from the base up; avocado, cucumber, smoked trout, mayonnaise, mixed lettuce leaves and a sprinkling of salt and pepper.
BBQ marinated chicken pieces, cheese, cucumber, mixed lettuce and pepper.
For this sandwich I used fresh Wholemeal Country Grain Loaf with sesame seeds from Bakers Delight. In the sandwich was avocado, sliced chicken meat, tomato, yellow capsicum, cheese, lettuce, salt, pepper, mayonnaise and tomato sauce.
Mum and I made focaccias for the family. T loved his and I have to say, they were yummy. Mine was filled with cheese, tomato, sliced turkey breast, spinach leaves, avocado and cranberry sauce. We toasted the focaccia in a sandwich press so they were nice and crunchy.

Subway for Lunch
Subway is always great for a quick, cheap and healthy meal. Sometimes I get a wrap, sometimes a 6 inch multigrain. My main filling choices are tuna, chicken pieces or, in today's case, a vegie patty. I always have the same salads too, 'everything except onion and jalapeno.' Honey mustard is my dressing of choice but today I also tried some sweet onion, not again though, it was dripping out the bottom of the sub.
It's not very pretty but it hit the spot!
